Pot Roast and Homemade Applesauce

Recently at church, my pastor started his message with sharing his flavorful memories of past Sunday dinners. He started explaining how he would come through the door and smell the aromatic roast in the crockpot. Added to that would be the sweet smell of carrots, hearty potatoes, and softened onions. My mouth started watering as he explained this delicious combo. I decided that’s the flavorful meal I need to make.

I also thought homemade applesauce is a great pair to this dish. This recipe for applesauce is so easy you can throw it together and on the stove in less than 30 minutes.

Pot Roast

2-3 lb Chuck Roast (boneless will serve 4-5 per pound, with bone will
serve 2-3 per pound)
3/4 cup Beef Broth
1 Tbs Worcestershire (plus a dash or more over the roast)
1 package Dry French Onion Soup Mix
3-4 Idaho Potatoes
8 Carrots
2 Vidalia (or sweet) Onions
2-3 Bay Leaves

1. Place roast in crockpot.
2. Mix 1 Tbs Worcestershire, Beef Broth, and Onion Soup Mix together and pour over roast.
3. Place cut up potatoes, carrots cut in halves, and quartered onions around the roast.
4. Put a dash of Worcestershire over the whole roast and add your bay leaves on top.
5. Put the top on your crockpot and cook for 6-7 hours on high or 9-10 hours on low.
6. You may need to add more water or Beef Broth throughout the day. If you are leaving the house just add extra liquid when you start it.
7. When serving, make sure you toss out the bay leaves before plating this dish. You can also make a great brown gravy with the cooking liquid.

Economical Tip: If you have Pot Roast leftovers, add gravy and toss with egg noodles for tomorrow’s lunch or dinner. Voila 2 meals in one.

Homemade Applesauce

4 lbs Pink Lady or Jonathan Apples are the best. If these are not in
your local area no worries, use what you can find.
1 cup Water
1/4 cup Sugar
Pinch of Salt
2 Cinnamon sticks or 1/2 tsp Ground Cinnamon

1. Peel, core, and cut apples into 1 inch chunks.
2. Combine all ingredients in a large pot. Cover and cook on medium low heat for 15-20 minutes.
3. Take off heat and remove Cinnamon Sticks if used. Mash apples with a potato masher until desired consistency. Taste and add sugar if needed.
4. Serve warm or cool to room temperature.
