We love our soups and here’s an all time favorite for us. Very simple and easy for anyone to make! Enjoy!
1 tbs olive oil
1 small onion, finely chopped
2 carrots, chopped
2 stalks celery, chopped
5 ½ cups of chicken bone broth or chicken broth
3 cups water
Pepper to taste
1 1/2 skinless, boneless chicken breast
10 oz homemade egg noodles (or as much as preferred)
- Heat olive oil. Add onion, carrots, celery and cook until tender and lightly browned. Stir often.
- Add broth, water and pepper and chicken. Heat until boiling and simmer until chicken is no longer pink.
- Remove chicken and cut into pieces then add back into soup.
- Add noodles.
- Cook until noodles are done.
