Morning Berry Smooth Meta Muffins {Recipe} #Metamucil #Meijer

I have currently worked with two big M’s.  No, not M & M’s, Metamucil and Meijer.  I have recently partnered with them to bring awareness of the health benefits of fiber.

I have never used Metamucil, so I am excited to see what it does for my family as far as fiber content goes.  Did you know that there are some amazing recipes you can create with Metamucil as an ingredient?

I had a tough time choosing a recipe to create for this particular post, but I am looking forward to trying the other recipes in the future.

I chose to make the Morning Meta Muffins, but with a twist! Instead of using Original Smooth Metamucil in the original recipe idea, I used Berry Smooth. Since my 8 year old just loves cooking in the kitchen, she helped me make these amazing muffins.  She was intriqued that the muffin batter turned a pinkish-red due to the berry smooth powder.

Here is the recipe for Morning Meta Muffins

Yield: 12 Muffins

Serving Size: 1 Muffin = 1 Adult Serving of Metamucil

Ingredients

1 Cup of Fat-Free Milk

1 Egg

1/2 Teaspoon Applesauce

1/2 Teaspoon Cinnamon

1/2 Teaspoon Vanilla

2/3 Cup of Brown Sugar

1 Cup Flour

1 Teaspoon Baking Soda

1 Teaspoon Baking Powder

1/2 Teaspoon of Salt

1 Cup Blueberries

12 Teaspoon Sugar-Free Original Smooth Metamucil Powder

Directions

Pre-heat oven to 375˚F. Mix milk, egg, vanilla, applesauce, cinnamon and
sugar. In separate container mix flour, baking soda, baking powder and
salt. Slowly add flour mixture to milk mixture, once well mixed, add
blueberries and mix in the Metamucil then pour into muffin tin. Drink 8
ounces of water with each muffin

The Morning Meta Muffins turned out amazing!  They also tasted amazing as well.  I will be honest, I was nervous that they wouldn’t taste good with Metamucil being one of the ingredients.  But now giving it a shot, I think this product is fantastic in recipes.

  7. Does it mess with the texture at all? I can’t imagine it would but sometimes the smallest change can make it have a different texture – thanks for the share!

      When I was mixing the batter I did notice the texture changed which had me worried. LOL! The muffins did turn out great, but I did notice the end result is just a little stickier than that of traditional muffins. Hope that helps! And thanks!
