Who doesn’t love to use the crockpot in the fall? I sure do. I recently received a slow cooker gift pack from Red Gold which contained cans of crushed tomatoes, diced tomatoes, diced w/ green chilies, diced with lime juice and cilantro and diced with garlic and olive oil and recipes to try. Who thought there were so many choices of tomatoes out there? I sure didn’t.
Red Gold is a family-owned company that focuses on slow cooking and encourages families to have a hot meal waiting after a busy school/work day. Using tomatoes in soups, stews and casseroles may also offer more nutrition than fresh. When tomatoes are heated, the antioxidant lycopene (linked to several health benefits) is released. Red Gold tomatoes are locally grown in Michigan, Indiana and Ohio. One of my favorite slow cooker recipes is chili and LOVED the idea of using tomatoes with spices already in it was an awesome concept. Simply use your usual chili recipe and add Red Gold’s tomatoes with Green Chilies or Lime Juice and Cilantro instead of your usual plain tomatoes and……a great tangy new recipe has been created. Rustic Italian Chicken
Servings: 6 | Preparation Time: 20 minutes | Cook Time: 360 minutes
12 boneless skinless chicken thighs, about 2 pounds
2 large carrots, cut into 1/2 inch slices
1 medium red bell pepper, chopped
1 cup sliced fresh mushrooms
4 garlic cloves, minced
2 tablespoons Italian seasoning
Salt and black pepper to taste
1 (14.5 ounce) can Red Gold® Diced Tomatoes
2 (15 ounce) cans Red Gold® Crushed Tomatoes or 1 (28 ounce) can Red Gold® Crushed Tomatoes
3 cups pasta of choice, cooked and drained
• Spray slow cooker with cooking spray. Place chicken in slow cooker and top with remaining ingredients, except pasta.
• Cover and cook on LOW for 6 to 8 hours. Serve chicken over pasta and garnish.
• Garnish Options: Parmesan cheese and chopped fresh basil.
